Liquids evaporate at a lower temperature. Water boils at around 202°F in Denver versus 212°F at sea level. That means moisture is leaving your batter faster than the recipe expects, leaving you with dry, crumbly results even when you swear you followed the instructions.

At this elevation, you're in serious territory and may need to make all of the above adjustments more aggressively. Some bakers at these heights also switch to cake flour instead of all-purpose for more delicate recipes, since its lower protein content can help prevent over-toughening when you've already added extra flour.

Troubleshooting Common High-Altitude Baking Problems

My cake sinks in the center every single time. This is almost always a leavening issue. Cut back on your baking powder or soda first — it's the most common culprit. Also check that you're not over-creaming your butter and sugar, which incorporates extra air that'll escape too fast.

My cookies spread out completely flat. Try chilling your dough for at least 30 minutes before baking. Also reduce sugar slightly and add a tablespoon of flour. Baking at a slightly higher temperature helps them set before they have a chance to spread too far.

My bread isn't rising the way it should. Yeast actually works faster at altitude too, which sounds helpful but can mean your dough over-proofs before it hits the oven. Watch the dough rather than the clock — proof until it's just about doubled, not beyond. You can also reduce yeast by about 25% to slow things down.

My muffins look great but taste dry inside. Add a bit more liquid and consider reducing bake time slightly. That faster evaporation is stealing moisture before the crumb fully sets. A tablespoon of sour cream or Greek yogurt stirred into the batter can work wonders for keeping things tender.

My brownies are gummy or underbaked in the middle. Increase your oven temperature by 25°F and give the pan a few extra minutes. The sugar concentration issue tends to hit dense, fudgy baked goods hardest — reducing sugar by just a couple tablespoons often makes a noticeable difference.
